Vegan Nutella Brownies (No-Bake)

These vegan nutella brownies come together in just a few easy steps with minimal ingredients. They taste just like nutella, and are great if you're looking for a treat that's on the healthier side. They're also gluten-free and no-bake so no need to turn on the oven.

Ingredients

  • 2 ½ cups Iswari GF Oats Hazelnut Butter & Cacao  or GF oats and cacao powder *see notes
  • ¼ teaspoon sea salt
  • 12 medjool dates pitted
  • ¼ cup cacao powder
  • ½ cup hazelnut butter
  • 2-4 tablespoons non-dairy milk

COATING

  • 5.3 oz vegan dark chocolate
  • ¼ cup hazelnut butter

Instructions

  • Add the gluten-free oats and salt to your food processor and blitz for a minute until finely ground. Add the dates and hazelnut butter and blend again for a minute or two until the ingredients have broken down.
  • Add the cacao powder and non-dairy milk and blend until the mixture forms a dough. (If the dough is already sticky before this step add less plant milk)
  • Press the mixture into the base of an 8x8” pan lined with parchment paper. Use a spatula to flatten it out. Set aside.
  • Melt the chocolate and hazelnut butter together over a double boiler. Spread the chocolate over the brownies and top with chopped hazelnuts. Chill for 1 hour, slice, and serve.

Storage

  • Store in the fridge in an airtight container. They're best when consumed within 5 days. You can also freeze them in an airtight container and defrost before serving.

Notes

  • Iswari Gluten-Free Oats Hazelnut Butter & Cacao - substitute with 2 ½ cups oats plus ¼ cup cacao powder
  • Hazelnut butter: If you're not a fan of hazelnuts you can make these with any nut butter of your choice. Cashew butter or peanut butter work really well.
