If you're new to vegan cheesecake, my classic no-bake vegan cheesecake is an easy place to start, while my baked vegan cheesecake gives you a lighter, more traditional baked texture. Most of the cheesecakes I make are designed to be prepared in advance, and many actually benefit from an overnight chill, which makes them especially useful for entertaining.

After developing dozens of cheesecakes over the years, I've learned that there isn't one vegan filling that works for every recipe. I use combinations of vegan cream cheese, yogurt, cashews, tofu, and coconut depending on the texture I want. With fruit cheesecakes, I often cook the fruit into a curd or reduction first so you get a stronger flavor without introducing enough water to make the filling soft or icy.

Start here if you want a classic cheesecake or something with a more traditional baked texture. These are also a good introduction to the different methods I use for vegan cheesecake, from an easy chilled filling to fluffy baked and crustless versions.

No-Bake Vegan Cheesecake

This is the classic no-bake cheesecake I'd recommend making first. It has a buttery cookie crust and creamy vanilla filling, and the basic method became the starting point for many of my flavored cheesecakes.

Adapted from my mom's German cheesecake, this one is lighter and fluffier than a dense New York-style cheesecake, with a buttery crust and cherry compote.
